It's Time to Fire Up Those Grills How to Make the Perfect Steak
Six Quick tips for grilling steak: 1. Heat the grill adequately. For charcoal grills, mound briquettes into a pyramid, use fire starters and let the coals heat for about 30 minutes. For gas grills, light one burner only, then turn on the rest. Cover and let the grill heat for 10 to 20 minutes. 2. Pat the steak dry of surface moisture and then season it olive oil, salt and pepper or your favorite dry rub. 3. Use direct heat for steaks. Turn only once during the cooking process. 4. The lid should remain closed during cooking. 5. Use a timer and an instant-read thermometer to test for doneness. Use the timer to determine when the meat should be flipped and the thermometer to see if it has reached the desired doneness. 6. Very rare meat registers 130 F on a meat thermometer, medium is 145 F and well done is 170 F.
